A High fibre, Low effort meal. Packed with iron, plant protein and fiber. Perfect for those cold winter nights.

Ingredients (1–2 servings)
- 1 1/2 cup uncooked red lentils
- 4-5 cup water (depending how you like it)
- 1 medium carrot, chopped
- A handful of spinach,
- 2 Garlic cloves
- 1 medium onion
- 2 stock cubes
- 3 table spoons Moroccan spice mix
- 1 tea spoon oil
- A few fresh herb, i suggest parsley or coriander
Instructions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3–4 minutes until soft and fragrant.
- Stir in the Moroccan spice mix and cook for another 30 seconds to bring out the flavour.
- Add the chopped carrot, red lentils, stock cubes, and water. Stir well and bring to a boil.
- Reduce the heat and simmer for 20–25 minutes, stirring occasionally, until the lentils are soft and the soup thickens
- Stir through the spinach and cook for 1–2 minutes until wilted.
- Taste and season if needed. Top with fresh parsley or coriander before serving.
