  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3–4 minutes until soft and fragrant.
  2. Stir in the Moroccan spice mix and cook for another 30 seconds to bring out the flavour.
  3. Add the chopped carrot, red lentils, stock cubes, and water. Stir well and bring to a boil.
  4. Reduce the heat and simmer for 20–25 minutes, stirring occasionally, until the lentils are soft and the soup thickens
  5. Stir through the spinach and cook for 1–2 minutes until wilted.
  6. Taste and season if needed. Top with fresh parsley or coriander before serving.
